Quick and Healthy Grilled Peach Dessert


I'm always on the look out for new recipes that are quick and easy to make and today I found a dessert from the 'Cook with M&S' app, originally the recipe was grilled peaches with maple syrup and a black pepper glaze. I had to modify the recipe slightly because I didn't have all the ingredients to hand at the time. So instead I just had grilled peaches with some Carte D'or vanilla ice cream, but I have to admit it was as yummy and delicious as I expected it to be. The recipe was super simple and the app makes it so easy to follow meaning that just about everyone will be able to make this amazing dessert.

I thought I'd give you the original recipe to follow then you can make modifications that follow your own personal taste or depending on what you have in your kitchen cupboards.

Ingredients (for one person):
2 scoops of mascarpone (or vanilla ice cream)
1/4 pinch of ground black pepper
1 tbsp of maple syrup
1 peach

Method:
1. Halve and stone your peach.
2. Place the peaches cut side up on a baking tray lined with foil.
3. Grill under a moderate heat (I used 170 degrees fan) for 3-4 minutes or until the flesh starts to darken slightly and blister.
4. Spoon the maple syrup evenly over each peach halve letting it trickle into the stone cavities.
5. Pop back under the grill and cook for another 3-4 minutes until the syrup is bubbling and the fruit is very tender.
6. Carefully lift the peaches onto a serving plate or bowl and spoon a generous dollop of mascarpone cream (or vanilla ice cream) alongside.
7. Now sprinkle or grind some fresh black pepper over the fruit.
 
*Nutritional Values (1 peach with 2 scoops of Carte D'or Vanilla Ice Cream): 168 kcal, 3.5g Protein, 27g Sugars, 4.5g Fat, 4g Saturated Fat, 0.1g Salt.

As you can see with only 7 simple steps the maximum amount of time this recipe will take you is 10 minutes, perfect for someone who doesn't have a lot of time on their hands, but still wants that sweet and relatively healthy treat after their dinner. Obviously you can make this more or less unhealthy by reducing some of the sweeter ingredients, such as the maple syrup and mascarpone, or get rid of them all together. Although I think having a little bit of something sweet with the peach is what really sets this dessert off. I also think this recipe would be nice with the addition of some raspberries over the top or even substitute peaches for nectarines, its so simple that it allows you to add your own personal twist to it, be creative and enjoy!
